Pan Fried Potatoes

(à viande)

The day before:
Boil >>> some potatoes with the skin on
cool and refrigerate.
Have ready:

  • those potatoes from yesterday.
  • a cooking onion, mushrooms, sweet colourful peppers
    (more onion, less mushroom, even less peppers)
  • some leftover cooked meat
    (I try to use cut up pieces of pork roast)
  • butter
  • buns from the bin

Do:

Open a bottle of beer and toast the recipe writer.
Toss 2 tablespoons or so of butter and a tablespoon of oil in a heavy frying pan and turn burner to medium.

Add the following to the pan in order:
Peel the onions and chop roughly, (be careful - expose your knuckles to the blade, never your fingertips).
Relieve the potatoes of their skins. Cut them up into bite size pieces.
Cut the mushrooms and sweet pepper --- not too much sweet pepper.

Fry the onions, potatoes, mushrooms and sweet pepper until the onions go limp.
Sometime in there, add the cooked meat, (optional). Sprinkle salt and pepper over it.

Now relax a little, Call your partner over to the table and engage in a little small talk.

You're done!
