7 Ingredient Pancakes
This method makes 6 small ones.
Put in a big bowl and combine these dry ingredients:

just less than 1 cup Flour

1 teaspoon Baking Powder
-
1/8 teaspoon salt
-
1/2 tablespoon sugar
Put in a smaller bowl these liquid ingredients:

1 Tablespoon melted butter or oil
-
1 egg yolk
-
3/4 cup milk
Whip until peaks form in a separate bowl:
-
the egg white from that egg yolk
You can really beat the liquid ingredients if you want with a hand mixer, a wire whisk or a clean 9 iron.
Pour the liquid ingredients and the whipped egg white into the dry. Stir just enough to make it all wet.
To cook:
Take a non-stick frying pan, or anything you've got, (the snobby gourmets and ice fishermen among you can haul
out their cast iron frying pans with the beautiful patina that comes from years of seasoning)
Drop a tablespoon of oil or so on the frying pan and bring it up to just above medium heat. Let the pan heat up
Spoon out some batter onto the pan and -- well - fry a pancake. e-mail me if
