Hot Chocolate for One
You might recall that my recipe for cheese sauce compromised quality for the sanity of the chef. This recipe compromises nothing. The only insane part is that you must obey me totally. Don't use a microwave. Don't use skim milk, (you don't own any skim milk, do you).

- fill a mug with milk - not to the brim - leave about 3/4 of an inch at the top.

- pour that milk into a small pot on the stove - turn the burner to 7, (where 10 is the hottest).

- meanwhile, measure out 1 & 1/2 rounded small spoonfulls of cocoa into that mug you had the milk in. - Drop 1 & 1/2 rounded small spoonfulls of sugar in there too.

- stir the cocoa and sugar together with enough milk to form a paste, (you can take a little milk from the pot or some fresh milk to do this).

- have you been stirring the milk in the pot? - once or twice will suffice.

- don't let it boil. It'll be hot enough when it gets all steamy - test if you must.

- pour the milk into the mug and stir well.

- don't let the spoon hang around in the mug. Whatever settles to the bottom is like dessert.
- don't put alcohol in it. Hot Chocolate tastes good.
