It's not pretty but it's sufficiently varied in taste and texture that you'lll be wise to give it a try
Slap a non-stick frying pan on the stove, (med heat), and dab it with butter and cooking oil.
Find some left over boiled potatoes and carrots in the fridge, cut them up and fry them in the prepared pan.
Cut up a tomato in thick slices and lay them on a cookie sheet. Salt and Pepper them and slide the tray under the broiler.
Keep watch while you stir the potatoes so that the tomato doesn't burn. You want to mimic the taste of those English B&B broiled tomatoes you had when you were backpacking around Europe in your naive youth.
In your spare time, slice some mozzarella cheese thinly so that it will fit on the tomato slices. When the tomatoes are kind of bubbly, top with the cheese slices and sprinkle parmesan cheese on top. Slide under the broiler again until the cheese browns, (not long).
When everything is done, fry an egg in the pan you had the potatoes in.
